Instructions
Start by hard-boiling the eggs. To do this, place the eggs in a saucepan and cover them with cold water. Bring the water to a boil, then reduce the heat and let the eggs simmer for 10 minutes. Once done, remove the eggs from the heat and run them under cold water until they're cool enough to handle.
Once the eggs are cooled, peel them and cut them in half lengthwise. Remove the yolks and place them in a bowl. Set the egg whites aside.
Cut the avocado in half, remove the pit, and scoop out the flesh. Add the avocado to the bowl with the egg yolks.
Add the mayonnaise, Dijon mustard, and lemon juice to the bowl, and use a fork to mash everything together until it's smooth.
Season the mixture with salt and pepper to taste.
Spoon the mixture back into the egg whites, dividing it evenly among them.
Sprinkle paprika on top of the eggs (optional).
Refrigerate the eggs for at least 30 minutes before serving.
