Keto Cucumber Sandwich

Equipment

  • 1 Sharp knife
  • 1 Cutting board
  • 1 Spoon
  • 1 Paper towel

Ingredients
  

  • 1 large Cucumber
  • 8 slices Deli meat
  • 4 slices Swiss Cheese
  • 4 tbsp mayonnaise
  • 2 tbsp Dijon mustard
  • Salt and pepper to taste
  • Optional toppings: lettuce, tomato, avocado (optional)

Instructions
 

  • Wash and dry the cucumbers.
  • Cut the cucumbers into thin, even slices using a sharp knife or a mandoline slicer.
  • Place the cucumber slices on a paper towel to remove excess moisture.
  • In a small bowl, combine the cream cheese, fresh herbs, salt, and pepper. Mix well until all the ingredients are thoroughly incorporated.
  • Take a cucumber slice and spread a thin layer of the cream cheese mixture on one side.
  • Place a slice of deli meat on top of the cream cheese
  • Add another cucumber slice on top of the meat, creating a sandwich-like structure then, repeat the process until you have assembled the desired number of sandwiches.
  • Arrange the Keto Cucumber Sandwiches on a serving plate and garnish with additional fresh herbs if desired.
