Ingredients
  

  • 1 cup of gluten-free all-purpose flour
  • 1 cup yellow cornmeal
  • ¼ cup of coconut sugar
  • 1 tbsp of baking powder
  • ½ tsp of salt
  • 1 cup of unsweetened almond milk
  • ¼ cup of melted coconut oil
  • ¼ cup of unsweetened applesauce

Instructions
 

  • Preheat oven to 180°C (350°F) and grease an 8x8 inch baking pan.
  • In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt.
  • In a small bowl, whisk together the milk, oil, and applesauce.
  • Add the wet ingredients to the dry ingredients and stir until well combined. Fold in any optional add-ins if desired.
  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 25 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cornbread cool slightly before cutting into squares and serving.
